Callaloo, like so many food plants, has a complicated history, as it made its way across the Atlantic with people who were taken into slavery. Callaloo remains a common vegetable throughout the Caribbean. This mild tasting, super nutritious leafy green brings exquisite colour to salads and plenty of chlorophyll to stews and soups. Callaloo seeds can be harvested and used as a protein rich, gluten-free grain.
